Our oil
The olives used to produce the Girolomoni olive oil are mostly of the Carolea variety (mainly because they allow for a sweeter and more balanced flavour), Grossa di Cassano, Tondino, and Dolce di Rossano. Defoliation and washing take place with machines of the latest generation which, thanks to special air current flows, can keep intact the olives during the various steps. The olives cleaned this way and without residues are then crushed and placed in special steel tanks. The olive paste thus obtained is then cold extracted and separated into three parts: water, pomace and the excellent extra virgin olive oil, which we offer in 750 ml bottles.
